This is coffee that breaks the rules—in the best possible way. Fresh herbal notes of sage, mint, eucalyptus, and thyme dance together in a cup that's refreshing, delicate, and unlike anything you've tried before. It's the result of an innovative co-fermentation process at Aquiares farm, where coffee cherries are fermented in water used to extract eucalyptus essential oils. Wild? Absolutely. Delicious? You bet.

Aquiares is the largest contiguous coffee plantation in Costa Rica, and it's a place where tradition meets innovation. The Robelo family doesn't just grow coffee—they grow cocoa, bananas, oranges, and produce essential oils, all while championing sustainability and pushing the boundaries of what coffee can be.
The magic happens during fermentation. After harvesting, ripe coffee cherries are fermented in water that's been used to extract essential oils from eucalyptus leaves. This co-fermentation gives the coffee its distinctive herbal and citrus character. After fermentation, the beans are sun-dried and mechanically finished to lock in those bright, complex flavours.
Brewing: This coffee is born for filter brewing. Light roasted to preserve its complexity and purity, it shines in a V60, Chemex, or your favourite pour-over method. Expect bright acidity, medium body, and a flavour profile that'll have you questioning everything you thought you knew about coffee. Sure, make espresso if it makes you happy - we'll not tell anyone.
