The Mata de Minas region in Minas Gerais sits within the Atlantic forest — one of Brazil's most biodiverse ecosystems and an exceptional environment for specialty coffee. The Araponga micro-region within it is defined by its dramatic mountain terrain, which creates a fascinating range of microclimates. A single farm can experience different conditions from one crop to the next, adding layers of nuance and complexity to every harvest.
This lot was processed with real care: after harvest, cherries were separated by density before heading to suspended drying beds. For the first two days, thicker layers encouraged natural fermentation of the fruit. Once moisture dropped, the layers were thinned and the beds covered — allowing a slow, uniform dry over around 10 days. The result is a beautifully clean natural with real depth.
